SALSA CHIMOL (MILD)
Ingredients:
½ bunch fresh cilantro, finely chopped
1-2 limes
4 tomatoes, finely chopped
¼ small red onion, finely chopped
2 radishes, finely chopped
1 small cucumber, finely chopped
salt to taste
To Prepare:
Combine ingredients in a bowl, mix and refrigerate for a few hours or overnight to let the flavours blend together.
SALSA ROJA (SPICY)
Ingredients:
3 tbsp olive oil
¼ onion, finely chopped
1 clove garlic, finely chopped
1 serrano or jalapeño pepper, chopped
2 cups tomatoes, peeled, seeded and chopped
2 tsp dried oregano
salt and pepper to taste
¼ cup cilantro, chopped (optional)
To Prepare:
Heat the oil in a saucepan over medium heat. Add the onion, garlic and chilies and sauté for 2-3 minutes, or until the onion is translucent.
Stir in the tomatoes and oregano and simmer for about 10 minutes. Remove from heat and cool.
Purée the tomato sauce in a blender until smooth, adding a little water if needed. Add salt and pepper to taste, stir in cilantro if using, and serve.
